Cook the Jasmine Rice

Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine 1 cup of jasmine rice with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for another 10 minutes.

Prepare the Heirloom Carrots

Peel and slice the heirloom carrots into thin rounds. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the carrots, season with salt and pepper, and sauté for about 5-7 minutes or until tender.

Cooking the Tuna

Marinate the Tuna

In a bowl, combine soy sauce, sesame oil, honey, minced garlic, and grated ginger. Add the tuna steaks, ensuring they are well coated. Let them marinate for at least 10 minutes.

Sear the Tuna

In a skillet, heat the remaining tablespoon of olive oil over high heat. Remove the tuna from the marinade (reserve the marinade) and sear the tuna steaks for 2-3 minutes on each side for medium-rare. Adjust cooking time according to your preference.

Glaze the Tuna

Pour the reserved marinade into the skillet after removing the tuna. Bring it to a boil to thicken slightly, then remove from heat.

Plate the Dish

Fluff the jasmine rice with a fork and place it on the serving plates. Top with the sautéed heirloom carrots and the seared tuna. Drizzle the reduced marinade over the tuna. Garnish with chopped green onions and sesame seeds if desired.
