Preheat a grill or skillet over medium-high heat. Brush the Copper River salmon fillets with olive oil, then season with salt and black pepper. Grill or sear for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

In a bowl, combine mayonnaise, finely chopped lemongrass, lime juice, minced garlic, and salt. Mix until well combined and set aside.

Prepare a smoker or stovetop smoking setup with wood chips. Place the whole eggs on the rack and smoke them for approximately 30 minutes. Once done, remove and cool. Peel the eggs and set aside.
