Prepare the Artichokes
Trim the artichokes by cutting off the stems and removing the outer leaves. Boil them in salted water for about 20-25 minutes until tender. Drain and set aside.
Cook the Lentils
In a pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Stir in the red lentils, Thai red curry paste, and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 20 minutes, or until lentils are soft.
Add Coconut Milk
