Prepare the Snap Peas
Trim the ends of the snap peas and set aside.

Make the Ginger Dressing
In a small bowl, whisk together the grated ginger, soy sauce, rice vinegar, sesame oil, honey, salt, and black pepper until well combined. Adjust seasoning to taste.
Cooking the Salmon

Cook the Salmon
Heat a non-stick skillet over medium-high heat. Season the salmon fillets with salt and black pepper on both sides. Place the salmon in the skillet, skin-side down, and cook for about 4-5 minutes. Flip the salmon and cook for an additional 3-4 minutes, or until cooked through and flakes easily with a fork.

Assemble the Salad
In a large bowl, combine arugula and snap peas. Drizzle with half of the ginger dressing and toss to coat.

Plate the Dish
On a serving plate, place a portion of the arugula and snap pea salad. Top with a salmon fillet and scatter sliced cucumbers around. Drizzle additional ginger dressing over the top if desired.
