    Chop the Vegetables

    Dice the onions, bell peppers, zucchini, and carrots into small pieces. Mince the garlic and ginger.

    Prepare the Protein

    If using chicken, dice it into small cubes. If using chickpeas, drain and rinse them thoroughly.

Cooking

    Sauté the Base Ingredients

    In a large pot, heat 2 tablespoons of oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and ginger, cooking for an additional 2 minutes until fragrant.

    Incorporate the Tomatoes

    Add the chopped tomatoes to the pot and cook down until they are soft, about 5-7 minutes.

    Spice it Up

    Sprinkle in the curry powder, turmeric, cumin seeds, chili powder, and salt. Stir well to combine and cook for another 2 minutes.

    Add Vegetables and Protein

    Add the diced bell peppers, zucchini, and carrots to the pot. If using chicken, add the diced chicken breast now. Stir everything together.

    Pour in the Liquid

    Add the coconut milk and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

    Add Chickpeas

    If using chickpeas, add them to the pot during the last 5 minutes of cooking to heat through.

Serving

    Once the curry is cooked, remove from heat. Chop fresh cilantro and squeeze lime juice over the top before serving. Serve hot with rice or naan.
