    Prepare the Steak

    Heat the olive oil in a skillet over medium-high heat. Season the filet mignon with salt and black pepper on both sides.

    Cook the Steak

    Add the filet mignon to the skillet and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is achieved. Remove from heat and let rest for a few minutes.

Caramelized Onions

    Slice the Onion

    Thinly slice the large onion.

    Caramelize the Onion

    In the same skillet used for the steak (drain any excess fat if necessary), melt the butter over medium heat. Add the sliced onion and sugar. Stir occasionally, cooking for about 15-20 minutes until the onions are golden brown and caramelized.

Horseradish Cream

    Mix the Horseradish Cream

    In a small bowl, combine the sour cream, prepared horseradish, and lemon juice. Mix well until smooth and set aside.

Assembly

    Assemble the Sandwich

    Slice the baguette or ciabatta bread in half. Place one filet mignon on the bottom half, top with caramelized onions, crumbled Amablu cheese, and a generous dollop of horseradish cream. Place the other half of the bread on top.

    Cut the sandwich in half and serve immediately while warm.
