Prepare the Steak
Season the filet mignon pieces with salt and crushed black peppercorns on both sides.

Cook the Steak
In a large skillet, heat the olive oil over medium-high heat. Add the steaks and sear for about 3-4 minutes on each side for medium-rare, or to your desired doneness. Add the butter during the last minute of cooking, basting the steak with the melted butter.

Rest the Steak
Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing.

Add Cream and Seasoning
Stir in the heavy cream, beef broth, Dijon mustard, and green peppercorns. Bring the mixture to a simmer and let it cook for about 5-7 minutes, or until it thickens slightly.

Finish the Sauce
Taste and adjust seasoning with salt and pepper if necessary. Remove from heat.
