    Prepare the Steak

    Season the filet mignon pieces with salt and crushed black peppercorns on both sides.

    Cook the Steak

    In a large skillet, heat the olive oil over medium-high heat. Add the steaks and sear for about 3-4 minutes on each side for medium-rare, or to your desired doneness. Add the butter during the last minute of cooking, basting the steak with the melted butter.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing.

Brandy Cream Sauce

    Make the Sauce

    In the same skillet used for the steak, reduce the heat to medium and add the brandy. Carefully scrape the bottom of the skillet to deglaze, cooking for about 1 minute.

    Add Cream and Seasoning

    Stir in the heavy cream, beef broth, Dijon mustard, and green peppercorns. Bring the mixture to a simmer and let it cook for about 5-7 minutes, or until it thickens slightly.

    Finish the Sauce

    Taste and adjust seasoning with salt and pepper if necessary. Remove from heat.

Mashed Potatoes

    Cook the Potatoes

    Place the diced potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the butter, milk, salt, and black pepper. Mash until smooth and creamy.
