    Activate Yeast

    In a small bowl, combine warm water and sugar. Sprinkle active dry yeast over the top and let it sit for about 5-10 minutes until frothy.

    Mix Dough

    In a large mixing bowl, combine all-purpose flour and salt. Once the yeast is activated, pour it into the flour mixture and stir until a dough forms.

    Knead Dough

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the kneaded dough in an oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

    Shape Pretzels

    Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and twist into a pretzel shape.

    Boil Pretzels

    In a large pot, bring water to a boil and add baking soda. Carefully place each pretzel into the boiling water for 30 seconds, then remove and place on a baking sheet lined with parchment paper.

    Top with Sea Salt

    Sprinkle coarse sea salt over the pretzels before baking.

    Bake Pretzels

    Preheat your oven to 425°F (220°C) and bake the pretzels for about 12-15 minutes or until golden brown.

    Whip Cream

    In a stand mixer or using a hand mixer, whip the heavy cream on medium-high speed until it thickens and eventually separates into butter and buttermilk.

    Drain Buttermilk

    Once the butter has formed, drain off the buttermilk and reserve it for another use or discard.

    Knead Butter

    Knead the butter by hand or with a spatula to remove any remaining buttermilk, then mix in salt to taste.

    Transfer the butter to a container and refrigerate until ready to serve.
