Method

Preparation of Ingredients

  1. 1

    Prepare the Cheese

Grate or cube the aged cheddar cheese into bite-sized pieces and set aside.

  2. 2

    Prepare the Apples

Wash the apples, core them, and slice them thinly. If desired, you can leave the skin on for added texture and nutrients.

  3. 3

    Toast the Pecans

In a dry skillet over medium heat, add the pecans. Toast them for about 5 minutes, stirring frequently until they are golden and fragrant. Remove from heat and let them cool.

  4. 4

    Wash the Greens

Thoroughly wash the field greens under cold water. Spin dry in a salad spinner or pat dry with a clean kitchen towel.

Make the Dressing

  1. 5

    Combine Dressing Ingredients

In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until well combined and emulsified.

Assemble the Salad

  1. 6

    Combine Ingredients

In a large salad bowl, combine the prepared field greens, sliced apples, toasted pecans, and grated/cubed aged cheddar.

  2. 7

    Dress the Salad

Drizzle the prepared pub vinaigrette over the salad. Toss gently to combine all ingredients and coat them with the dressing.

Serving

  1. 8

    Plate and Serve

Serve immediately in individual bowls or plates. Optionally, garnish with a few extra toasted pecans and cheese on top.
