    Drain the dill pickle slices and pat them dry with paper towels to remove excess moisture.

    In one bowl, place the all-purpose flour. In a second bowl, beat the eggs and mix in the milk. In a third bowl, combine the cornmeal, salt, black pepper, garlic powder, and paprika.

    Bread the Pickles

    Take each pickle slice and coat it in flour, then dip it into the egg mixture, and finally coat it in the cornmeal mixture. Ensure each slice is evenly coated.

    Heat the Oil

    In a deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Fry the Pickles

    Once the oil is hot, fry the breaded pickles in batches, ensuring not to overcrowd the pan. Fry for 2-3 minutes or until golden brown, flipping once. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.

    In a medium bowl, mix together the mayonnaise, chipotle peppers in adobo sauce, lime juice, garlic powder, and salt until well combined.

    Taste the chipotle mayo and adjust the salt if necessary. If you prefer more heat, add an additional chipotle pepper.
