Marinate the Beef Ribs
In a large bowl, combine Dragon's Milk beer, soy sauce, brown sugar, minced garlic, minced ginger, and black pepper. Stir until the sugar is dissolved.

Add the Beef Ribs
Place the beef ribs in the marinade, ensuring they are fully submerged. Cover and refrigerate for a minimum of 4 hours, ideally overnight.

Sear the Ribs
In a large Dutch oven, heat olive oil over medium-high heat. Remove the ribs from the marinade (reserve the marinade for later) and sear them in the hot oil until browned on all sides, about 4-5 minutes per side. Remove the ribs and set aside.

Deglaze and Add Ingredients
Pour in the reserved marinade and beef stock, scraping the bottom of the pot to release any browned bits. Add thyme and bay leaves, stirring to combine.

Braise the Ribs
Return the seared ribs to the pot. Bring to a simmer, then cover and reduce the heat to low. Allow to braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.

Remove the ribs from the pot and let them rest for a few minutes. Skim excess fat from the surface of the braising liquid, then strain the liquid if desired. Serve the ribs with the sauce poured over the top.
