Method
For Chicken Milanese
- 1
Prepare the Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
- 2
Set Up Breading Station
In three shallow dishes, place the flour in the first, beaten eggs in the second, and combine panko breadcrumbs, Parmesan cheese, salt, and pepper in the third.
- 3
Bread the Chicken
Dredge each chicken breast in flour, shaking off excess. Dip in the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
- 4
Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Carefully add breaded chicken breasts and cook until golden brown, about 4-5 minutes per side. Remove and let drain on paper towels.
For Lemon Butter
- 5
Make Lemon Butter
In a small saucepan over low heat, melt the butter. Stir in lemon juice, lemon zest, and chopped parsley. Keep warm until ready to serve.
