1. Prepare the Ingredients
Slice the ripe tomatoes into thin rounds and set aside.
2. Slice the Cheese
Drain the fresh mozzarella and slice it into round pieces, each about 1/4 inch thick.
Assembly
3. Spread Pesto
Take one slice of sourdough bread and spread 1 tablespoon of basil pesto evenly over one side.
4. Layer Ingredients
On top of the pesto, layer the sliced fresh mozzarella followed by the tomato slices. Sprinkle with salt and black pepper to taste.
5. Top and Finish
Spread another tablespoon of pesto on another slice of sourdough bread and place it on top of the assembled ingredients, pesto side down.
