Battered Snap Peas

    Prepare the Snap Peas

    Rinse the snap peas under cold water and trim the ends. Pat them dry with a paper towel.

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

    Heat the Oil

    In a deep saucepan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Snap Peas

    Dip each snap pea into the batter, allowing excess batter to drip off. Carefully place them into the hot oil in batches and fry until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Truffle Aioli

    Mix the Aioli

    In a small bowl, combine the mayonnaise, minced garlic, truffle oil, and lemon juice. Mix well until smooth.

    Taste the aioli and add salt to taste. Adjust the truffle oil if a stronger flavor is desired.
