Noodle Preparation

Cook the Rice Noodles
Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions, usually around 5-7 minutes, until tender but still firm. Drain and rinse under cold water to stop the cooking process. Set aside.
Vegetable Preparation

Prepare the Vegetables
While the noodles are cooking, prepare the vegetables. Slice the bell pepper, julienne the carrot, and slice the green onions. Rinse the bean sprouts and chop the cilantro. Set all vegetables aside.
Spicy Sauce Preparation

Make the Spicy Sauce
In a small bowl, combine the soy sauce, sriracha sauce, sesame oil, honey, rice vinegar, minced garlic, and grated ginger. Whisk together until well mixed and set aside.
Assembly

Combine and Serve
In a large bowl, add the cooked rice noodles. Top with the prepared vegetables and drizzle the spicy sauce over the top. Toss gently to combine everything. Serve immediately, garnished with additional cilantro if desired.
