Prepare the Fries
Peel the potatoes and cut them into thick strips. Rinse with cold water and pat dry.

Fry the Potatoes
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the potato strips in batches for about 5-7 minutes until golden brown. Remove and drain on paper towels.

Make the Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold beer, mixing until smooth.

Prepare the Fish
Pat the fish fillets dry with paper towels. Dip each fillet into the batter, allowing excess to drip off.

Fry the Fish
Carefully place the battered fish fillets into the hot oil. Fry for 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Serve
Serve the fish and chips hot with tartar sauce on the side.
