1. Prepare the Vegetables
Preheat the oven to 375°F (190°C). Heat olive oil in a pan over medium heat, then sauté minced garlic until fragrant. Add sliced zucchini and mushrooms, cooking until softened. Stir in fresh spinach and cook until wilted. Season with salt and pepper, and set aside.
2. Mix the Cheese Filling
In a bowl, combine ricotta cheese, egg, half of the mozzarella cheese, and chopped fresh basil. Mix well and season with salt and pepper.
3. Layer the Lasagna
Spread a thin layer of tomato sauce on the bottom of a baking dish. Place 4 lasagna noodles over the sauce. Spread half of the cheese mixture over the noodles, followed by half of the sautéed vegetables, and another layer of tomato sauce. Repeat the layers, finishing with a layer of noodles topped with remaining tomato sauce and mozzarella cheese.
4. Bake the Lasagna
Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden. Let it cool for a few minutes before slicing.
