Method

Roasting the Maitake

Prepare the Maitake

Preheat your oven to 200°C (400°F). Clean the maitake mushrooms and tear them into bite-sized pieces.

Season and Roast

Toss the maitake with olive oil, salt, and black pepper. Spread them out on a baking tray and roast in the oven for about 20 minutes, or until golden and crispy.

Making the Salsify Purée

Prepare the Salsify

Peel and chop the salsify into small pieces. Boil in salted water until tender, about 15 minutes.

Blend the Purée

Drain the salsify and place in a blender. Add butter, heavy cream, and salt, then blend until smooth. Set aside.

Preparing the Tokyo Turnips

Cook the Turnips

Slice the Tokyo turnips in half and toss with olive oil and salt. Sauté in a pan over medium heat until tender, about 10 minutes.

Toasting the Pine Nuts

Toast the Pine Nuts

In a dry skillet over medium heat, toast the pine nuts until golden brown, about 3-5 minutes. Stir frequently to prevent burning.

Making the Salsa Verde

Blend the Salsa Verde

In a food processor, combine parsley, capers, garlic, lemon juice, and olive oil. Blend until smooth and season with salt to taste.
