Prepare the Salmon
Preheat your oven to 400°F (200°C). Season the salmon fillets with olive oil, salt, and black pepper on both sides.

Cook the Salmon
Place the salmon fillets on a baking sheet lined with parchment paper and bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Prepare the Field Peas
While the salmon is baking, bring a small pot of water to a boil. Add the field peas and cook for about 3-5 minutes until tender. Drain and set aside.

Sauté the Heirloom Cherry Tomatoes
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the heirloom cherry tomatoes and sauté for 2-3 minutes until they start to blister. Season with a pinch of salt and black pepper.

Assemble the Dish
On each plate, place a salmon fillet, a scoop of field peas, a handful of sautéed heirloom cherry tomatoes, and drizzle with romesco sauce. Garnish with fried rosemary.
