    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips, about 1/4-inch thick. Rinse the cut potatoes in cold water to remove excess starch, then soak them in water for at least 30 minutes.

    Heat the Oil

    In a large, heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C) over medium heat.

    Fry the Potatoes (First Fry)

    Drain the soaked potatoes and pat them dry with a clean kitchen towel. Carefully add a batch of potatoes to the hot oil and fry for about 4-5 minutes, or until they are soft but not brown. Remove with a slotted spoon and drain on paper towels.

    Fry the Potatoes (Second Fry)

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for an additional 2-3 minutes, or until they are golden brown and crispy. Remove and drain on paper towels.

    Season with Herbs

    While the fries are still hot, sprinkle them with sea salt and the chopped fines herbes (parsley, thyme, chives, rosemary). Toss gently to coat evenly.

    Serve

    Serve the pommes frites immediately while hot and crispy.
