    Prepare the Frites

    Preheat your oven to 220°C (425°F). Cut the potatoes into thin strips, rinse them in cold water, and pat them dry. Toss the potato strips with 2 tablespoons of olive oil, salt, and black pepper. Spread them on a baking sheet and bake for about 30-35 minutes until golden and crispy, flipping halfway through.

    Cook the Maitake Mushrooms

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the maitake mushrooms and cook for 5-7 minutes until golden brown. Season with salt, pepper, and fresh thyme. Set aside.

    Cook the Ribeye Steaks

    Season the ribeye steaks generously with salt and black pepper. In a large skillet or grill pan over high heat, add 1 tablespoon of olive oil. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the pan and let rest for a few minutes.

    Prepare the Petite Salade

    In a bowl, toss the mixed salad greens with lemon juice, olive oil, salt, and pepper to taste.

    Serve the ribeye steaks topped with the roasted maitake mushrooms, a side of frites, and a small helping of the petite salade.
