    Prepare the Potatoes

    Peel and cut the russet potatoes into small cubes. Boil them in salted water until fork-tender, about 10 minutes. Drain and let them cool completely.

    Mash and Season

    Once cooled, mash the potatoes in a large bowl. Add duck fat, all-purpose flour, garlic powder, onion powder, salt, black pepper, and chopped chives. Mix until well combined.

    Form Tater Tots

    Using your hands, form the potato mixture into small cylindrical shapes (about 1 inch long). Place them on a baking sheet lined with parchment paper.

    Fry the Tater Tots

    Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the tater tots in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

    Prepare the Aioli

    In a bowl, combine mayonnaise, smoked malt vinegar, minced garlic, lemon juice, and season with salt and black pepper to taste. Mix until smooth.

    Serve the crispy duck fat tater tots hot with the smoked malt vinegar aioli on the side for dipping.
