Activate the Yeast
In a small bowl, combine warm water, honey or sugar, and active dry yeast. Let it sit for about 5-10 minutes until it's frothy.
Mix the Dough
In a large mixing bowl, combine gluten-free all-purpose flour and salt. Pour in the activated yeast mixture and olive oil. Mix until a sticky dough forms.
Knead the Dough
Transfer the dough onto a floured surface and knead gently for about 5 minutes. The dough should be soft and slightly tacky.
First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
Prepare for Baking
Preheat the oven to 425°F (220°C). Once risen, punch down the dough and spread it onto a greased baking sheet, creating dimples with your fingers.
