Cheesecake Preparation

    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, and salt. Mix until combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 8-10 minutes, then remove and let it cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar and mix until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream, matcha green tea powder, and vanilla extract until fully incorporated and smooth.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about an hour.

    After the cheesecake has cooled, refrigerate it for at least 4 hours or overnight. Once chilled, remove the cheesecake from the springform pan. Slice and serve as desired. Enjoy your matcha cheesecake!
