Prepare the Filling
In a bowl, combine ground pork, chopped cabbage, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Assemble the Dumplings
Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Wet the edges of the wrapper with water, fold in half and pinch to seal, creating pleats if desired. Repeat until all filling is used.

Cook the Dumplings
Heat a non-stick skillet over medium heat and add a little oil. Place the dumplings in the skillet, flat side down, and cook for 2-3 minutes until the bottoms are golden brown. Pour in a small amount of water (about 1/4 cup), cover, and let steam for 5-6 minutes until cooked through.

Serve
Remove the lid and let the dumplings cook for another minute to crisp the bottom. Serve hot with soy sauce or dipping sauce of your choice.
