Preparation

    Prep the Ingredients

    Chop the green bell pepper, red onion, tomato, and jalapeño into small pieces. Set aside.

    Cook the Meats

    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, sauté the kielbasa until browned and heated through. Remove and set aside.

    Cook the Eggs

    In the same skillet, use the bacon drippings to cook the eggs to your preference (sunny side up, scrambled, etc.). If necessary, add a little extra oil or butter.

    Combine Vegetables

    In the skillet, add the chopped green bell pepper, red onion, tomato, and jalapeño. Sauté until the vegetables are tender, about 3-5 minutes.

    Add Chili and Meats

    Stir in the house-made chili and the cooked kielbasa. Allow to heat through for another 2-3 minutes.

Assembly

    Serve the Breakfast

    On a plate, layer the chili and vegetable mixture. Top with the cooked eggs, sprinkle with cheddar cheese, and crumble the crispy bacon on top. Add a dollop of sour cream as desired.
