Method

Preparation

  1. 1

    Prepare the Vegetables

Dice the red onion, green pepper, red pepper, and mushrooms finely. Set aside.

  2. 2

    Cook the Chorizo and Ham

In a skillet over medium heat, add the chorizo and ham. Cook until the chorizo is browned and the ham is heated through, about 5-7 minutes.

Cooking

  1. 3

    Sauté the Vegetables

Add the diced vegetables to the skillet with the chorizo and ham. Sauté for another 5-7 minutes until the vegetables are tender.

  2. 4

    Cook the Eggs

In a separate pan, prepare the eggs to your liking (scrambled, fried, or poached). Cook them for about 3-5 minutes.

  3. 5

    Melt the Cheese

Once the eggs are cooked, sprinkle the cheddar cheese over the hot vegetables and meats in the skillet. Allow the cheese to melt for about 1-2 minutes.

Serving

  1. 6

    Combine and Serve

Plate the cheesy chorizo and vegetable mixture, top with the cooked eggs, and drizzle with gravy. Serve immediately.
