Mac 'n Cheese

Eggs Benedict

Method

Mac 'n Cheese Preparation

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Make the Cheese Sauce

In the same pot, melt butter over medium heat. Stir in flour and cook for about 1 minute until bubbly. Gradually whisk in milk, and continue stirring until the mixture thickens. Add salt, pepper, garlic powder, and cheddar cheese. Stir until the cheese is melted and smooth.

  3. 3

    Combine Pasta and Sauce

Add the drained macaroni to the cheese sauce and mix well to coat evenly. Set aside.

Eggs Benedict Assembly

  1. 4

    Toast the English Muffins

Slice the English muffins in half and toast them to a golden brown.

  2. 5

    Cook the Potatoes

In a skillet, heat olive oil over medium heat. Add cubed potatoes, season with salt and pepper, and cook until golden and crispy, about 10-15 minutes. Stir occasionally.

  3. 6

    Prepare the Eggs

Poach the eggs in simmering water until the whites are set but the yolks are still runny, about 3-4 minutes.

  4. 7

    Layer the Ingredients

On each toasted English muffin half, layer with a generous amount of mac 'n cheese, crumbled bacon, and shaved ham. Top with a poached egg.

  5. 8

    Add Hollandaise Sauce

Drizzle the creamy hollandaise sauce over each poached egg.

  6. 9

    Serve

Serve immediately with crispy potatoes on the side.
