Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in the marinade and coat them well. Cover the bowl and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

Grilling the Salmon

  1. 3

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Cook for 6-8 minutes on each side, or until the fish flakes easily with a fork. Use a spatula to carefully flip the salmon halfway through.

Preparing the Vegetables

  1. 4

    Prep the Vegetables

While the salmon is marinating, wash and cut the asparagus, bell peppers, and zucchini into bite-sized pieces. Halve the cherry tomatoes.

  2. 5

Toss with Olive Oil and Season

In a large bowl, combine the asparagus, bell peppers, zucchini, and cherry tomatoes. Drizzle with olive oil and sprinkle with salt. Toss to coat evenly.

Grilling the Vegetables

  1. 6

    Grill the Vegetables

Place the prepared vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once both the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon alongside the seasonal vegetables on a plate.

  2. 8

    Garnish

Optional: Garnish with fresh herbs like dill or parsley for added flavor and presentation.
