Mac 'n Cheese

Eggs and Assembly

Method

Mac 'n Cheese

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Make the Cheese Sauce

In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until golden. Gradually whisk in the milk, and continue whisking until the mixture thickens, about 3-5 minutes.

  3. 3

    Combine Cheese and Season

Remove from heat and stir in the shredded cheddar cheese until melted and smooth. Add salt, black pepper, and paprika. Stir in the cooked macaroni until well coated.

Eggs and Assembly

  1. 4

    Prepare the Potatoes

In a skillet, heat the butter over medium heat. Add the cubed potatoes and sauté until golden brown and cooked through, about 10-15 minutes. Season with salt and pepper to taste.

  2. 5

    Toast the English Muffins

Split the English muffins and toast them until golden brown.

  3. 6

    Cook the Eggs

In a non-stick skillet, cook the eggs to your desired doneness (poached, scrambled, or fried). Season with salt and pepper.

  4. 7

    Assemble the Dish

On each toasted English muffin half, layer a slice of shaved ham, a generous scoop of mac 'n cheese, followed by the cooked egg. Top with crumbled bacon.
