Prepare the Vegetables
Wash and chop all the vegetables into thin strips. Set them aside in separate bowls for easy access.

Cook the Noodles
In a large pot, bring water to a boil. Add the sliced noodles and cook according to package instructions until al dente. Drain and set aside.

Stir-fry the Vegetables
In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Add the onions and carrots first, sautéing for about 2 minutes.

Add Remaining Vegetables
Add the bell pepper, broccoli, and napa cabbage. Stir-fry for another 3-4 minutes until they start to soften. Then add the bean sprouts and scallions.

Combine with Noodles
Add the cooked noodles to the skillet along with 2 tablespoons of soy sauce and stir well to combine everything. Cook for an additional 2-3 minutes to heat through.

Serve
Remove from heat, and serve hot. You can garnish with extra scallions or sesame seeds if desired.
