Prepare the Filling

In a large skillet over medium heat, add the ground pork or chicken. Cook until browned, breaking it apart as it cooks. Add garlic, ginger, and cook for another minute.

Add Vegetables

Stir in the shredded cabbage, carrots, and green onions. Cook for about 3-5 minutes until the vegetables are tender. Add soy sauce, salt, and black pepper. Mix well and remove from heat.

Prepare the Wrappers

Lay an egg roll wrapper flat on a clean surface. Place about 2-3 tablespoons of the filling in the center of the wrapper.

Roll the Egg Rolls

Fold the bottom of the wrapper over the filling, then fold in the sides and roll tightly to seal. Use a little water on the edge to help seal the wrapper.

Fry the Egg Rolls

In a large pot or deep fryer, heat the oil to 350°F (175°C). Fry the egg rolls in batches for about 3-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serve hot with dipping sauce of your choice.
