    Prepare the Ingredients

    Chop the onion, bell pepper, carrot, and scallions. Cut the napa cabbage into thin strips and break the broccoli into small florets. Mince the garlic and ginger.

    Cook the Noodles

    Bring a large pot of water to a boil. Add chow mein noodles and cook according to package instructions until al dente. Drain and set aside.

    Stir-fry the Vegetables

    In a large wok or skillet, heat vegetable oil over medium-high heat. Add minced garlic and ginger, and sauté for 30 seconds until fragrant. Add onion, bell pepper, carrot, and broccoli, and stir-fry for about 3-4 minutes.

    Add Cabbage and Bean Sprouts

    Stir in napa cabbage and bean sprouts, and cook for another 2-3 minutes until the vegetables are tender but still crisp.

    Combine with Noodles

    Add the cooked chow mein noodles to the wok. Pour in soy sauce and sesame oil, and toss everything together until well combined. Cook for an additional 2 minutes.

    Season and Serve

    Season with salt and pepper to taste. Garnish with sliced scallions and serve hot.
