    Prepare the Ingredients

    Wash and prepare all the vegetables: slice the water chestnuts, bamboo shoots, mushrooms, carrots, celery, green pepper, and halve the baby corn. Cut the broccoli into small florets.

    Cook the Shrimp

    In a large pan or wok, heat 2 tablespoons of oil over medium-high heat. Add the shrimp and stir-fry until they turn pink, about 3-4 minutes. Remove the shrimp and set aside.

    Stir-fry the Vegetables

    In the same pan, add another tablespoon of oil if needed. Add the carrots, celery, green pepper, and broccoli. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.

    Combine Ingredients

    Add the mushrooms, bamboo shoots, water chestnuts, and baby corn to the pan. Stir-fry for an additional 2 minutes.

    Add Sauce and Shrimp

    Return the shrimp to the pan. Add your favorite Szechuan sauce (homemade or store-bought) and stir well to combine all ingredients. Cook for another 2-3 minutes until everything is heated through.
