Make the Dough
In a mixing bowl, combine flour and salt. Gradually add boiling water while stirring with chopsticks or a fork until it forms a dough. Knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a bowl, mix ground pork or beef, chopped Chinese cabbage or onions, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well until combined.
Assembling Potstickers

Shape the Potstickers
Divide the dough into small balls and roll each ball into a thin circle (about 3 inches in diameter). Place a small spoonful of filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
Cooking Potstickers

Cook the Potstickers
Heat a non-stick skillet over medium heat and add a tablespoon of oil. Place the potstickers in the skillet, flat side down, and cook until browned (about 2-3 minutes). Add 1/4 cup of water to the skillet and cover immediately. Steam for about 5-7 minutes until water evaporates and potstickers are cooked through.

Make the Dipping Sauce
In a small bowl, mix soy sauce, rice vinegar, sesame oil, and chili oil (if using). Serve alongside the potstickers.
