Prepare the noodles
Soak the rice noodles in hot water for about 30 minutes or until they are soft. Drain and set aside.
Cook the tofu
In a large frying pan or wok, heat 2 tablespoons of vegetable oil over medium heat. Add the cubed tofu and cook until golden brown. Remove the tofu and set aside.
Scramble the eggs
In the same pan, add another tablespoon of oil. Crack the eggs into the pan, scramble them until fully cooked, and then add the minced garlic. Cook for another minute.
Combine ingredients
Add the soaked rice noodles, cooked tofu, soy sauce, fish sauce, brown sugar, and lime juice to the pan. Stir-fry everything together for about 3-5 minutes.
Finish and serve
Add green onions and bean sprouts, tossing everything together. Adjust seasoning with chili powder to taste. Serve hot, garnished with crushed peanuts.
