1. Cook the Noodles

Boil water in a large pot, add the Chinese egg noodles, and cook according to package instructions until al dente. Drain and set aside.

2. Make the Sauce

In a bowl, combine soy sauce, chili oil, sesame paste, Sichuan peppercorns, preserved mustard greens, and sugar. Mix well to create a spicy sauce.

3. Cook the Pork

In a skillet over medium heat, add the ground pork. Cook until browned and fully cooked, breaking it apart with a spatula.

4. Prepare Toppings

Chop scallions finely and prepare peanuts by roughly crushing them.

In a large bowl, combine the cooked noodles with the spicy sauce and cooked pork. Toss well to coat. Top with chopped scallions and crushed peanuts before serving.
