Prepare the Broth

In a large pot, add the beef bones and water. Bring to a boil, then reduce to a simmer. Skim off any foam that rises to the top. Add ginger, garlic, soy sauce, chili oil, and salt. Simmer for about 2 hours.

Cooking the Soup

Cook the Noodles

In a separate pot, cook the noodles according to package instructions. Drain and set aside.

Add Vegetables and Beef

After 2 hours of simmering the broth, strain the soup to remove solids. Return the broth to the pot and bring to a boil. Add sliced beef, broccoli, daikon, and cook for about 5-7 minutes until the beef is cooked through and the vegetables are tender.

Assemble the Soup

Add cooked noodles to bowls. Pour the hot broth with beef and vegetables over the noodles. Top with spinach, cilantro, and scallions. Drizzle with extra chili oil if desired.
