Prepare Sushi Rice

Rinse the Rice
Place 2 cups of sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 18-20 minutes until the rice is tender and all water is absorbed.

Season the Rice
Transfer the cooked rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold it in with a spatula. Allow the rice to cool to room temperature.

Mix the Filling
In a medium bowl, combine the drained canned tuna, mayonnaise, soy sauce, and chopped green onion. If desired, add Sriracha to taste for extra heat. Mix until well combined.
Assemble the Rolls

Lay Out Nori
Place a bamboo sushi mat on a clean surface. Lay one nori sheet shiny side down on the mat.

Spread the Rice
With wet hands, take about 3/4 cup of sushi rice and spread it evenly over the nori, leaving about 1 inch of space at the top edge.

Add the Filling
Place a line of the tuna filling along the center of the rice-covered nori.

Roll the Sushi
Using the bamboo mat, carefully roll the nori away from you, tucking it tightly over the filling. Continue to roll until the entire sheet is rolled up. Use a little water to seal the edge of the nori.

Slice the Rolls
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Garnish and Serve
If desired, sprinkle with sesame seeds and serve with wasabi and pickled ginger on the side.
