Preparation
Prepare the Marinade
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper until well combined.
Marinate the Escolar
Place the escolar fillet in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate the fish.
Cooking
Preheat the Grill
Preheat your grill to medium-high heat. If using a grill pan, heat it on the stove over medium-high heat.
Prepare the Vegetables
While the fish is marinating, toss the asparagus and cherry tomatoes with a little olive oil, salt, and pepper in a bowl.
Grill the Vegetables
At the same time, place the asparagus and cherry tomatoes on the grill. Grill for about 5-7 minutes, turning occasionally until they are tender and slightly charred.
Serving
Plate the Dish
Once everything is cooked, plate the grilled escolar alongside the grilled asparagus and cherry tomatoes. Garnish with lemon wedges and freshly chopped parsley before serving.
