1. Prepare the Marinade

2. Marinate the Escolar
Place the escolar fillet in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate the fish.

Preheat your grill to medium-high heat. If using a grill pan, heat it on the stove over medium-high heat.

Once everything is cooked, plate the grilled escolar alongside the grilled asparagus and cherry tomatoes. Garnish with lemon wedges and freshly chopped parsley before serving.
