Prepare the Shrimp
Rinse the shrimp under cold running water and pat them dry with paper towels. Set aside.

Make the Tempura Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, and baking powder. In another bowl, whisk together the ice water and egg yolk. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. The batter should be slightly lumpy and cold.

Heat the Oil
In a deep saucepan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Dip each shrimp into the tempura batter, letting the excess drip off, and carefully place them into the hot oil. Fry in batches, being careful not to overcrowd the pan. Cook for 2-3 minutes or until golden brown and crispy, turning occasionally for even cooking.

Using a slotted spoon, remove the shrimp from the oil and transfer them to a plate lined with paper towels to drain excess oil.
