Marinating Octopus

Prepare the Octopus
In a large pot, bring water to a boil. Add the octopus and cook for about 30-40 minutes until tender. Remove from heat and let it cool.

Make Marinade
In a bowl, whisk together olive oil, rice vinegar, soy sauce, minced garlic, grated ginger, chili flakes, salt, and black pepper.

Marinate
Once the octopus is cool, cut it into bite-sized pieces and add it to the marinade. Toss to coat evenly, cover, and refrigerate for at least 1 hour (or up to overnight).
Assembling the Salad

Prepare the Salad Base
In a large bowl, combine mixed salad greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.

Combine Ingredients
Add the marinated octopus to the salad base and gently toss to combine.

Garnish
Sprinkle sesame seeds and chopped green onions over the salad before serving.
