Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear. This helps to remove excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed rice and 1.25 cups of water. Cook according to rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until all water is absorbed.

    Season the Rice

    In a small saucepan, combine 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoons of salt. Heat gently until sugar dissolves. Once rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Let it cool to room temperature.

Prepare Spicy Tuna Filling

    Dice the Tuna

    Finely chop the sushi-grade tuna into small cubes.

    Make the Spicy Tuna Mixture

    In a bowl, combine the diced tuna, 2 tablespoons of mayonnaise, 1 tablespoon of Sriracha sauce, 1 teaspoon of sesame oil, and 2 tablespoons of chopped green onions. Mix well until combined.

Assemble the Rolls

    Prepare Your Rolling Station

    Lay a bamboo sushi mat on a flat surface and place a sheet of nori on the mat, shiny side down.

    Spread the Sushi Rice

    Wet your hands to prevent sticking and take about 3/4 cup of sushi rice. Spread it evenly over the nori, leaving about 1 inch of space at the top edge.

    Add the Filling

    Place a line of the spicy tuna mixture across the center of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, pickled ginger, and wasabi on the side.
