Prepare Sushi Rice

Rinse and Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and 2.5 cups of water in a rice cooker or pot. Cook according to your rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

Once cooked, transfer the rice to a large bowl. In a small bowl, combine the rice vinegar, sugar, and salt. Heat in the microwave or on the stove until the sugar dissolves. Pour this mixture over the warm rice, gently folding it in with a spatula. Let it cool to room temperature.

Cut the fresh salmon fillet into thin strips. In a separate bowl, mix the Sriracha sauce, mayonnaise, and chopped green onions. Add the salmon strips to this mixture, gently combining to coat the salmon evenly.

Place a bamboo sushi mat on a flat surface and lay a sheet of nori, shiny side down, on the mat. Wet your hands to prevent sticking.

Take about a cup of sushi rice and spread it evenly over the nori, leaving about an inch of space at the top edge. Press down gently to adhere the rice to the nori.
