Prepare the Sauce

Combine Ingredients
In a medium saucepan, combine the soy sauce, brown sugar, mirin, sesame oil, minced garlic, and minced ginger. Stir well to combine.

Cool the Sauce
Remove the saucepan from heat and let the teriyaki sauce cool slightly before using.
Cook the Salmon

Prepare the Salmon
Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper to taste.

Marinate
Place the salmon fillets in a shallow dish and pour half of the prepared teriyaki sauce over them. Allow the salmon to marinate for about 15-30 minutes.

Preheat the Grill or Oven
Preheat your grill to medium-high heat or your oven to 400°F (200°C).

Cook the Salmon
If grilling, place the salmon skin-side down on the grill and cook for about 6-8 minutes per side, basting with the reserved teriyaki sauce. If baking, place the salmon on a lined baking sheet and bake for about 15-20 minutes, basting with sauce halfway through, until cooked through and flakey.

Garnish and Serve
Once cooked, remove the salmon from the heat. Drizzle the remaining teriyaki sauce over the salmon, and sprinkle with chopped green onions and toasted sesame seeds before serving.
