Preparing Sushi Rice

Rinse the Sushi Rice
In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Sushi Rice
Combine the rinsed sushi rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then cover and simmer on low heat for 20 minutes.

Season the Rice
Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold this mixture into the warm rice. Allow to cool to room temperature.

Prepare the Salmon
If the salmon fillet is not skinless, remove the skin. Cut it into small pieces and mix with cream cheese, chopped chives, and lemon juice in a medium bowl until well combined.
Assembling the Sushi Rolls

Lay Out Nori
Place a bamboo sushi mat on a clean surface and lay one sheet of nori, shiny side down, on the mat.

Spread the Sushi Rice
With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge free of rice.

Add the Filling
Spoon a line of the salmon filling along the bottom edge of the rice-covered nori.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

Slice the Rolls
With a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a wet cloth between cuts for clean slices.
