Preparation of Seafood

Cook the Lobster
Bring a large pot of salted water to a boil. Add lobster tails and cook for 8-10 minutes until they are bright red and cooked through. Remove from water and let cool. Once cool, remove meat from tails and chop into bite-sized pieces.

Sauté Shrimp and Scallops
In a skillet over medium heat, add 1 tablespoon of olive oil. Add shrimp and scallops, season with salt and pepper, and sauté for 3-4 minutes until they are opaque and cooked through. Remove from heat and set aside.

Make Fried Rice
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat. Add minced garlic and sauté until fragrant. Push garlic to the side and crack in the eggs, scrambling them until fully cooked. Add cooked rice, green onions, soy sauce, salt, and pepper. Stir well to combine and cook for an additional 5 minutes, allowing the rice to fry slightly.

Assemble Salad
In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste. Toss gently to combine.

Plate the Dish
On a large plate, create a bed of fried rice. Arrange sautéed shrimp, scallops, and lobster pieces on top. On the side, add sautéed veggies and a generous serving of house salad. Serve warm and enjoy!
