Cooking Noodles

Boil Water
In a large pot, bring 1 liter of water to a rolling boil.

Cook Noodles
Add 200g of hibachi noodles to the boiling water and cook according to package instructions, typically 3-5 minutes, until al dente. Drain and set aside.
Preparing Vegetables

Chop Vegetables
While the noodles are cooking, prepare the vegetables. Rinse and chop the broccoli, julienne the carrots, and slice the bell peppers. Chop the green onions and set aside.
Making Sauce

Mix Sauce Ingredients
In a small bowl, combine 4 tablespoons of soy sauce, 2 tablespoons of sesame oil, 2 teaspoons of minced garlic, 1 teaspoon of minced ginger, 1 tablespoon of honey (or sugar), and 1 teaspoon of red pepper flakes. Whisk until well combined.

Stir-Fry Vegetables
In the same pan used for the protein, add the chopped vegetables. Stir-fry for 3-4 minutes until tender but still crisp.

Add Noodles and Sauce
Add the drained noodles to the pan with the vegetables. Pour the prepared sauce over the top and toss everything together until well combined and heated through, about 2-3 minutes.

Finish with Protein
If using, add the cooked chicken or tofu back into the pan. Toss everything together for another minute, then remove from heat.

Serve hot, garnished with chopped green onions and a sprinkle of black pepper to taste.
