Preparation of Masago

Prepare the Marinade

In a small bowl, mix together the soy sauce, sake, mirin, and wasabi until well blended.

Marinate the Roe

Place the capelin roe in a mixing bowl and pour the marinade over it. Gently toss to coat the roe evenly. Let it marinate in the refrigerator for at least 30 minutes.

Add Green Onions

After marinating, add the finely chopped green onions and sesame oil to the bowl. Stir gently to incorporate.

Serving the Masago

Prepare Sushi Rice

Cook sushi rice according to package instructions. Once cooked, allow it to cool slightly before using.

Assemble Sushi Rolls

Place a nori sheet on a bamboo sushi mat. Spread a layer of sushi rice evenly over the nori, leaving a small border at the top. Spoon a portion of the marinated masago mixture along the bottom edge of the rice.

Roll the Sushi

Using the mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge of the nori with a little water.

Slice and Serve

Slice the sushi roll into bite-sized pieces. Serve with pickled ginger and additional soy sauce on the side.
