Method
Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear to remove excess starch.

Cook the Rice
Transfer the rinsed rice to a rice cooker or pot. Add 2.5 cups of water and cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

Season the Rice
In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Prepare the Eel
If not already prepared, grill the eel until cooked through. Combine soy sauce and mirin in a small bowl. Brush this mixture over the eel.

Roll the Sushi
Place a sheet of nori on a bamboo sushi mat. Wet your hands with water to prevent sticking, then spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Arrange the eel, cucumber, and avocado along the bottom edge of the rice.

Form the Roll
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight. Seal the edge with a little water.

Slice the Roll
Using a very sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.

Garnish and Serve
Sprinkle sesame seeds on top of the sliced rolls. Serve with wasabi and pickled ginger on the side.
